The main concept of preparing adobo is to braise the proteins with local vinegar, soy sauce, whole peppercorns, and garlic. This was the traditional way to preserve the dish without the use of refrigeration. In this class, you will learn how to make chicken adobo using the chef’s mother's recipe and techniques.
